{"id":300,"date":"2011-12-09T15:01:05","date_gmt":"2011-12-09T22:01:05","guid":{"rendered":"http:\/\/lyspeth.com\/blog\/?page_id=300"},"modified":"2011-12-09T15:01:05","modified_gmt":"2011-12-09T22:01:05","slug":"lentil-stew","status":"publish","type":"page","link":"https:\/\/lyspeth.com\/blog\/food\/recipes\/lentil-stew\/","title":{"rendered":"Lentil Stew"},"content":{"rendered":"<p>This surprisingly simple recipe is great because of the interesting mild sweetness of the root vegetables.<\/p>\n<ul>\n<li>1\/2 cup chopped onion\n<li>1 1\/2 to 2 tsp curry powder\n<li>2 tbsp. cooking oil\n<li>2 1\/2 cups cubed rutabaga or turnip\n<li>1 cup sliced carrots\n<li>1 cup dry lentils w\/ 2 c water for cooking\n<li>1\/4 tsp salt\n<li>1\/8 tsp pepper\n<li>1 14 oz can tomatoes (undrained)\n<\/ul>\n<p>Saut\u00c3\u00a9 onion and curry powder in oil for three minutes.<br \/>\nAdd root veggies and lentils along with water for cooking lentils and simmer covered 15-20 mins, or until lentils are done. Stir in the salt, pepper, and tomatoes, and cook until everything is warm and done.<\/p>\n<h3>Notes<\/h3>\n<p>The amount of root vegetables is approximate and the mixture depends on your taste. I like to add parsnip and prefer rutabaga to turnip. Don&#8217;t add the tomatoes early on.
