Yogurt-Tahini Dip

This recipe is directly from Almost Vegetarian; I love it but don’t make it as often as I should. It’s wonderful with Grilled marinated vegetables (and tofu) with dressed wild rice.

  • 1 tbsp. tahini
  • 2 tbsp. lemon juice
  • 2/3 cup yogurt
  • 1/2 garlic clove, crushed in a press
  • 2 tsp. cumin
  • 1 tsp. paprika
  • 2 tbsp. cilantro, chopped

Mix ingredients. Allow to combine.

Note

Tahini is sesame paste. It’s used a lot in Middle Eastern food (including hummus) and has a very strong flavor. Therefore, don’t increase the amount unless you know what you’re doing.

I’m a garlic fan, but this recipe calls for a light touch with the garlic, so don’t go overboard til after you try it this way.

Don’t omit the cilantro unless you hate it; it gives a fresh balance to the dip that’s essential. Parsley will not substitute.
